A meat casserole is a nutritious meal. ‘Beef Casserole’ – olive oil, 1 small potato, 1 cup shredded mozzarella low-fat cheese, 1 pound ground sirloin (extra-lean), 1 chopped medium onion (yellow), 2 minced cloves of garlic, 1 can (no salt – 435 g) tomatoes (diced) with juice, chilli powder to taste, salt (optional), shredded, green cabbage (2 cups), fresh ground pepper, 1-3 tablespoons of taco sauce, 6 pickled chilli peppers (optional). Preheat oven (190°C), coat a 2l casserole dish lightly with oil. Grate peeled potato in a bowl. Mix in ¼ cup shredded cheese. Spread evenly at the bottom. Bake for 15-20 minutes till potato is crisp. Meanwhile brown the meat, garlic and onion in a large skillet (non-stick). Pour out excess fat. Stir in tomatoes with juice, cabbage and chilli powder. Season with pepper. Keep sautéing for a couple of minutes. Check the mixture. If it is dry, keep adding a few spoons of taco sauce until the mixture is moist. Spoon the mixture of beef and onions onto the cooked potato. Top with the remainder of the shredded cheese and pickled peppers. Bake for about 25-30 minutes. Check if the casserole is bubbly. This means it is done.
